    The reason sap flows in the Spring is because in the winter the sap
    freezes and then the sap thaws in the Spring and climbs up the trees.In the
    top part of the tree there is a hose that sucks the sap back down into the
    buckets.From there the buckets are taken to the SuargerHouse.It takes 35 to
    45 gallons of sap to make 1 gallon of syrup.
