Maple Syrup (FIRST Sap Run)

Sap is running again this week in the forest! This year we have thirty taps out, and we've been collecting this past week. Sap did run here in late January, but only for two days during the full moon time. During the last week of February, sap started to flow again during a warm spell, and most of the big syrup producers in the area are now opening up their operations, and school tours are beginning. We finished off our first sweet gift of the spring on March 1 - about four litres of syrup (one gallon)- it was great!
