This week we fired up the evaporator at our school for the first time. We have not gotten much sap this year. It is locked up inside the trees because the temperature has been too warm at night. However, we did finally collect enough to start boiling. We have our annual pancake breakfast this weekend and we hope we'll have enough Moharimet Maple to serve!
