took out the taps today - apr.1 because the spring peepers are singing and that is a sign that it's time to put away the buckets and the spiles. I am boiling down sap for the kids at sacred heart in marmora - they have 16 taps in and they have collected over 80,000 mL of sap... I am bottling their sweet treats this weekend - each student gets a cup of syrup and there's a few cups left over for the teacher!!! My spiles are also out - I have just over 4 gallons of syrup this year (we only tapped half of the bush). the run was not very good because it was not cold enough at night and there was no snow in the bush - the tree roots are waking up too quickly. I only boiled down 3 times this spring. BUT - the syrup is WONDERFULLY DELICIOUS!!! happy happy spring journey north!!
