Marvin Chambers of Waterford, Ontario, and other operators began tapping their maple trees late last month. Mr. Chambers began collecting sap on January 26th, which is four weeks ahead of schedule.



Marvin notes that below freezing temperatures at night and above-freezing temperatures during the day keeps the sap running and up and down the trunk. If it stays warm, the sap spreads to the tree’s extremities and stays there. Hence a lower production of maple sap and poor quality.

Marvin is not counting on much of a crop this year.
