Maple Syrup (FIRST Sap Run)

On Thursday March 8 we used six gallons of sap and boiled it on the stove. We boil the sap so the water evaporates out of the sap. We saw the water steaming over the pot in the form of water vapor. The sap was boiling at about 212-224 degrees F. After we boiled down the sap, we yielded about 1 1/2 cups of syrup. The syrup tasted so sweet. The syrup was Grade A. When the warm syrup cooled it formed into a sugar like candy. It is still delicious!
