We tapped 200 trees at each of the Laurel Creek and Camp Heidelberg Outdoor Education Centres on Feb 26 and 27 and had our first small run of sap shortly after. Didn't have enough sap to start our first boil until Saturday March 9 and finished our first syrup the next day. Have now bottled about 40 litres of Ontario Number 1 Light and Medium and are riding out a cold snap before we can fire up again.
