We have been collecting sap from our silver maple and red maple trees. We have collected about 20 gallons this season. Today is April 27 and we have stopped collecting sap and are cooking the last boil today. The red maple tree sap made syrup with a strange taste. We like the syrup from the silver maple trees. It is not so sweet.
