My kids and I tap every year, and we started on Saturday, Feb.21....I am astonished at how good the sap is running so early in the spring! We had maple water actually running into our buckets and some of the trees were pulsing. We collected 60 gallons from our trees on Sunday, and 60 gallons again todoay.
