We tapped the maple tree yesterday and it has started to fill the ice cream pail we are using to collect the sap. We will tap more trees tomorrow since we know the sap is running. I have been told that this should be a good week for collecting sap because we are supposed to have warm days (50 degrees) and cold, clear nights.
