We tapped 4 RED maple trees on 1/30/99. Collected sap 5 times. Saved and boiled down. Had a taste test, between SpringTree, 100%, a grocery store 2%, and our Red Maple Syrup100%. The grocery store syrup won! Guess that is what people around here are used to. However, students all wanted "ours" on their vanilla ice cream. It got rave reviews. Some say Red maple is bitter. We say you can't tell the difference between ours and 100% Sugar maple. The students used economics, made hypothesises, charted and graphed, wrote, interviewed and calculated. We had a great time.
