Maple Syrup (FIRST Sap Run)

The sap buckets have been almost dry for the past week. We had good sap flow on Saturday and Sunday, but since then, the weather was cool and wet and today, Thursday, it was very warm (+10) and sunny. Most of our sap buckets have cloudy sap. We have saved some fresh sap to use as medicine (we use it as a spring tonic), and we think we will have to take our buckets down this weekend and put them away. It has been a short season for syrup in Eastern Ontario, but the syrup tastes wonderful and it is a lovely colour!
