The maple sap continues to flow and we have boiled down our first batch of syrup and tonight I will finish the second batch. The sap ran very well on Saturday- the temperature was +5C and the sun was shining. Sunday (March 5) was windy and cloudy and there was not much sap. Today (March 6) the sun is shining, and we are supposed to have a high of +7C. I know the sap will flow well when the new moon time has come. The first quarter of the moon usually brings on a good sap flow so we are getting ready to stay up all night long to boil sap this week! The sap so far has been a beautiful colour and it tastes great!
