Eagles might carry their prey with talons and not the beak is because
carrying with the talons won't block their vision when they are flying.

If the prey was still alive, carrying it in their talons would mean that the
prey couldn't attack the eagle. If it was in the beak in the eagle, there
would be a chance that the eyes or neck of the eagle could be injured.

Holding on with two talons instead of one beak makes for a more secure grasp
    on the prey.

There are a lot more sharp points on the talons than on the beaks, so the
prey would be held more tightly.

It is probably easier to capture the prey with their feet rather than their
beak as they can watch where they are going and grab at the same time.

Flight might be easier with the weight being held in the center of the bird
    rather than the front.
